My biggest accomplishment today was taking a bunch of leftovers and turning them into 2 Mexican casseroles.
I guess that's better than nothing, right?

Casseroles are the food of the gods.
Frankly, I think there is something supernatural and holy about a casserole made from leftovers.
I wish I could have been there. . .
any food..that the word mexican in front of it is the best...well not better than peanut butter..but close.
